Otherwise, it's just queso oveja (sheep). And there are LOTS of varieties of it. The manchego fuerte I used was almost overwhelmingly strong, so a little went a long way. I fully support your future research! I had no idea there were so many variations (aside from random selections and descriptions at wholefoods).
